Pickled Garlic Scapes

(Adapted from the recipe here)

  • 1 large bunch garlic scapes, trimmed to about 4 inches, enough to pack relatively tightly into your jar
  • 1 cup water
  • 1 cup white vinegar
  • 2 tbsp pickling salt
  • 1 bay leaf
  • 2 cloves garlic
  • generous pinch dill seeds
  • pinch of peppercorns
  • pinch of cayenne pepper flakes (to taste)

Pack the scapes, garlic and bay leaf into your jar.  Sprinkle dill, peppercorns and pepper flakes over the top.  Boil water, vinegar and salt and pour over the scapes, leaving 1/4” of head room at the top of the jar.  Firmly knock the jar against the counter to get any air out, then put on the 2-piece lid.  Process in a hot water bath for 10 minutes.
